Bases génétiques et réduction de la production d’acide acétique chez des hybrides Saccharomyces

 Au cours de la fermentation du vin, la production d'acide acétique doit être maitrisée du fait de l’impact de ce composé sur la qualité du produit final. Certains hybrides naturels S. cerevisiae X S. kudriavzevii utilisés en œnologie et possédant par ailleurs des propriétés uniques produisent des quantités excessives d’acide acétique. Cette thèse a pour objectifs : (i) de reconstruire l’histoire évolutive d’une famille d’hybrides par des approches de génomique comparative (ii) de mieux comprendre l’impact de paramètres environnementaux sur la variabilité de production d’acide acétique de ces hybrides (iii) de développer des stratégies d’évolution afin de réduire cette production (iii) d’identifier l’origine génétique de la forte production d’acide acétique. Ce projet s’appuiera sur une combinaison d’approches de génomique comparative, évolution expérimentale, cartographie de QTL et analyse détaillée du métabolisme levurien. Il devrait générer des connaissances sur le génome, la physiologie et la plasticité métabolique de ces hybrides et conduire au développement de souches optimisées.
