Control of acetaldehyde production during the alcoholic fermentation in winemaking conditions

Acetaldehyde is one of the key criteria in the quality of Cognac base wines for distillation. Above a threshold value, this compound is involved in the “ethereal character” detrimental to the quality of Cognac. The overall objective of this study, conducted in partnership with Hennessy, is to control this character in white wines intended for distillation.

This Ph.D. work is focused on the alcoholic fermentation step to:

1/ better identify and understand the regulation of metabolic pathways involved in acetaldehyde synthesis;
2/ study the impact of environmental parameters on this production;
3/ design innovative strategies for the online monitoring and control of the fermentation process aiming at minimizing the ethereal character in wines.
