Microbial dispersal in low-imput bakery

The PhD is part of a national participatory research project (ANR "Bakery" project) which aims to study the sustainability of the low-input bakery industry. The microorganism’s diversity of French natural sourdoughs has been characterized. The objectives of the PhD are to understand the processes that could explain the distribution and the upkeep of this biodiversity. The PhD will consist in (i) analyzing the microbial flows along the bakery chain from the seed to the bread by developing adapted statistical methods (ii) testing the impact of terroir, wheat varieties and bakery on ​​the sourdough microflora. Finally, this project will expand genetic resources and think on programs to conserve and enhance the microbial diversity of French sourdoughs. To answer the scientific questions of the thesis, the doctoral student will study the microbial diversity of sourdough, flour, water using microbial community meta-barcoding methods and other methods of microbial genotyping. The know-how gained in the first year on the diversity and microbial flows could be applied to the experimental sourdoughs to test the soil, wheat and bakers effect in year 2 and 3. This project will be carried out in two laboratories, the Laboratory of Food and Industrial Microbiology at ONIRIS in Nantes (18 months), specialists in lactic acid bacteria and breadmaking processes, and the UMR SPO in Montpellier (18 months), specialists in yeasts and ecological genetics. It involves the participation of bakers and the follow-up of field experiments "at the bakery". The experimental sourdoughs studied during this PhD will also be characterized by functional characteristics (analysis of fermentative and proteolytic activities, sugar, vitamin and mineral content) by different teams participating in the ANR project and will be used to make experimental breads analyzed (analysis of volatile compounds and sensory test).
