Assessing the genetic bases of sulphur metabolism diversity in wine yeast

Saccharomyces cerevisiae wine yeast strains display strong variations in their ability to produce sulfur compounds such as sulfites, hydrogen sulfide and mercaptans derived from H2S. The genetic differences underlying these variations are mainly unknown, although some alleles controlling their productions in some strains have been already identified. The Ph. D project will aim at a large identification of genes and alleles involved in sulfur compounds formation in alcoholic fermentation by wine strains in order to provide novel knowledge and genetic tools to control their production through breeding. A mapping of genes will be performed through a multiparental QTL strategy that enables the identification of relevant genetic variations in several strains simultaneously. The impact of the identified genes/alleles on sulfur compounds formation in fermentation will be examined in a set of genetic backgrounds to assess the power of the alleles and their relevance in strain improvement. This should provide a sound, usable, knowledge for the development of wine yeast strains with low sulfur compounds formation through breeding programs.
