Study of the combined effects of nitrogen and temperature on aroma synthesis during the alcoholic fermentation in winemaking conditions

The overall objective of this Ph.D. work, carried out as part of the ANR StarWine project, is to study the direct and interacting effects of temperature and nitrogen additions on the production kinetics of fermentative aromas (involved in the fruity flavor of wines). Such a study is very innovative because up to now, impacts of these two parameters were studied separately. The first part of the work will be dedicated to the "macroscopic" study of the impact of these two factors. We will study in detail the kinetics of synthesis of fermentation aromas and perform gas/liquid balances of production of these volatile molecules. The second part of this Ph.D. work will be focused on the detailed study of the yeast metabolism and its regulation.

The thesis is carried out as part of the STARWINE project.
