Characterization of Botrytis cinerea laccases - Inhibition by polyphenols

My postdoc is a part of ALLAC2 project, led by Cédric Saucier (University of Montpellier, UMR SPO) in partnership with Societé BIOLAFFORT.

The overall objective of this project is to characterize laccases secreted by B. cinerea in order to develop effective solutions for their inhibitions in grape must. A first part of the project revealed a significant difference in activity between different strains of B. cinerea and revealed the secretion of two different laccases (Laccase 2 and laccase 3) by the fungus (Quijada-Morin et al., 2017; Aust J Grape Wine Res.). The next part of this project aims to understand the mechanisms of inhibition of these enzymes and development of specific oenological tannins.
